The scent of serenity

The blooming Hawthorn is one the first messenger of spring in the North. The distinct scent of the flowers mixed with the cold breeze has a special serenity about it, one that I have been trying to bottle for years. The scent is like a balm to the winter mind, slowly preparing to open the senses after a long period of hibernation.

There is nothing like meeting this cold breeze of anticipation that will suddenly hit you with a blow of wind, or when going for at walk or riding your bike on a spring morning.

Hawthorn also has also been acclaimed for it medicinal properties and is known as the ‘Friend of the heart’. Used as a supplement Hawthhorn is said to aid the heart circulation and general strengthening of the heart after 6-8 weeks of use.


Hot to use

The fresh Hawthorn flowers, are a beautiful additions to salads during the early spring. Always harvest the fresh, palatable new leaves, rather than the older and tougher leaves. Young leaves are lovely when accompanied by a dressing, and mixed with grated roots such as beetroot, carrot, and ginger. Or simply sprinkle them beautifully on your breakfast to elevate your morning.
